SIMPLE VEGAN GOLDEN VEGETABLE RICE
Take one cup of white basmati rice and place into a saucepan with 2 cups of vegetable broth, 1 Tbs turmeric and 1 Tbs dried mixed herbs. Bring back to the boil and add one finely diced carrot (you could also add half a red bell pepper diced here but i didn’t have one) Turn the heat down and simmer until the water has been absorbed, adding the peas about 5 minutes before the end. Serve with spring rolls NOM :)

Vegan Raspberry, Chocolate & Coconut Oatmeal (Raw)
Ingredients Serves 2
2 Cups regular oats
2 Tbs agave nectar/ brown sugar
1 tsp cinnamon
Handful of frozen raspberries
1 cup coconut milk (not tinned)
Desiccated coconut
1 Tbs cocoa powder
1 Banana 
1/2 cup soya yogurt
Method
Take half of the oats and pour into two bowls. Take the other half and roughly whizz in a blender. Then add the coco powder, raspberries, yogurt, coconut milk, most of the desiccated coconut, cinnamon and sugar/ agave. 
When you have a smoothie consistency, pour into the bowls and mix with the oats, place sliced banana on top and dust with extra cinnamon and desiccated coconut. :)

STICKY BROWN SUGAR & VANILLA ROASTED SEEDS
Ingredients
1 cup mixed seeds (I used pumpkin, sunflower and linseeds)
2 tsp agave nectar
1 very heaped tsp brown sugar
Vanilla extract or flavouring to taste
Method
Place the seeds in an oven-proof dish, stir in the agave, sugar and vanilla and roast at 200 degrees for about 15 minutes. Stir the seeds up half way through so they’re evenly toasted.

1 Ingredient Banana Ice Cream!

Vegan . Gluten Free

I discovered this recipe - if you can really call it that, somewhere else online but have since forgotten where! It really couldn’t be simpler and is really really yummy!

Take one ‘nana per person and chop into chunks, place in a freezer-safe dish and freeze. 

Once the ‘nanas are nice and frozen, remove from the freezer and place in a blender, whizz for about a minute then stir together to form spoonfuls. 

Serve dusted with a little cinnamon, nutmeg or mixed spice. 

Tada!!!
